AFRICAN RECIPES - IKOKORE

IKOKORE- Water yam pottage
INGREDIENTS          
 1 medium sized water yam.
 2 teaspoons tomato puree
 1 medium onion
 2 teaspoons fresh pepper (ground)
 ½ teaspoon locust beans (See local African Grocery Store)
 1 tablespoon meat or chicken stock.
 100 ml palm oil
 1.5 pounds  smoked dry fish
 2 magi/seasoning  cubes
 Salt (and condiments if desired)Ultimate Diet

Ground the onion. Peel the water yam. Wash the yam, and chop into small pieces.
Place the chopped up yam in a deep cooking pot. Add all other ingredients except fish.
Add 250ml of water and simmer for 1 hour. Remove the bones in the fish, break it, and wash. Add the fish to the boiling mixture. Mix the boiling mixture, and add a pinch of salt (to taste). Reduce the heat, cover the pot and simmer for 35-40 minutes until yam is cooked. Allow to cool, and then enjoy.

Eat as a full meal!!
