AFRICAN RECIPES - MOIN MOIN

MOIN-MOIN – (Bean Cake)
Prepare baking cans (same size for muffins) for the cooking: (lightly greased).
African Beans (get from African Grocery store)
Tomatoes (1.5 pounds)
Eggs
Dried Fish/ Meat/ Corned Beef
Palm oil (see local African Grocery store)Ultimate Diet

 

Soak some beans in a large container for about an hour or so. Rub the beans between your hands to peel the skin off. (The skin should float to the top of the container.) Keep doing this until you have most of the skin off the beans. Grind the beans into a smooth, finely-ground, mostly-liquid paste. Add blended tomatoes (or tomato sauce and paste), Add palm oil (just a few teaspoons), a little salt, and if you wish, you can also add hard-boiled eggs, or dried fish, or meat, or corned beef. Place mixture into baking pan(s) (leave enough room for the cooking moin-moin to rise). Place some water in a large pot. Place the baking pans into them. Boil the moin-moin until it forms a solid substance (at least half an hour) . Remove the moin-moin from the cans or the foil before serving.

Eat with rice or mashed potatoes
