EGUSI WITH EFO ---- (Melon soup with Spinach)
INGREDIENTS
Meat or fish (about 2.2 pounds)
2 tomatoes
1 onion
4 peppers
2 maggi/seasoning cubes
Cooking oil (vegetable oil)
1 cup of ground egusi (ground melon seeds)
One medium sized bag of spinach.
Salt
Water
Boil the meat or fish until it is tender, and keep it aside. Chop the spinach.
Ground the tomatoes, peppers and onions together (add some water until you get fluid consistency). Place in a pot, add the meat, and the seasoning cubes, and about 2 tablespoons of cooking oil, and the ground egusi, and the chopped spinach. Cook for about 20 to 30 minutes. Add salt and ground pepper to taste.
Serve this soup with boiled rice!!!! TASTY!!!
