EGUSI --- (melon soup)
INGREDIENTS
Meat or fish (about 2.5 pounds)
Cooking oil (vegetable oil)
1 cup of ground Egusi (melon seeds- See your local African store for this!!!)
Salt
4 peppers
2 maggi/ seasoning cubes
Water
2 tomatoes
1 onion
Boil the meat or fish until it is tender, and set aside. Ground the tomatoes, peppers and onions together (you will need to add some water to mix to get a fluid consistency). Place in a pot, add the meat, and the seasoning cubes, and about 2 tablespoons of cooking oil, and the ground egusi. Cook for 20 to 30 minutes. Add salt and ground pepper to taste. Eat with any of the dishes that have 'soup' with them. Try with Uncle Bens rice!!!! Really tasty
